Summer is well under-way and hopefully you are managing to enjoy it, despite the unpredictable weather. As well as getting outside and exploring nature, it’s the perfect time for trying out new foods too.

Here are some tasty recipes for you to try!

Grilled lemon herb chicken

Marinate chicken breasts in a mixture of lemon juice, olive oil, garlic and fresh herbs like rosemary, thyme and basil. Grill until fully cooked through and serve with a side of grilled vegetables or a fresh green salad.

Watermelon feta salad

Combine juicy watermelon cubes with crumbled feta cheese, mint leaves and a drizzle of balsamic glaze. This is a refreshing and light salad which is perfect for hot summer days.

Prawn tacos with mango salsa

Cook the prawns with a mix of spices, including garlic and coriander, and serve them in warm tortilla wraps. For a little extra, top with a vibrant mango salsa which is made by combining diced mango, red onion, cilantro, lime juice and an optional touch of jalapeño for some heat.

Caprese skewers

Thread cherry tomatoes, fresh mozzarella balls and basil leaves onto skewers, before drizzling with balsamic glaze and a sprinkle of salt and pepper for an easy yet delicious starter.

Gazpacho

Cook quinoa and toss it with diced cucumber, cherry tomatoes, green olives, crumbled feta cheese, red onion and a lemon-herb dressing. It's a light and nutritious summer salad that the whole family can enjoy.

Hawaiian BBQ chicken pizza

Spread BBQ sauce on a pizza crust and top with grilled chicken, sliced red onions, pineapple chunks and a handful shredded mozzarella cheese. Bake until the cheese is melted and bubbly then slice up and tuck in.

Iced tea

Brew your favourite tea (black, green or herbal) and sweeten it with honey or sugar if desired. Serve over ice with fresh mint leaves and lemon slices for a cool and invigorating drink.
