BBQ recipes to try this weekend
The weather is meant to be lovely this weekend, making it the perfect time to gather your friends and family, and enjoy some quality time together.
If you are stuck for what to do, why not make the most of the sunshine by hosting your own BBQ? This is a great way to soak up the rays while socialising, and lets the kids have fun outdoors too!
We have put together some delicious recipes for you to try this weekend.
Classic BBQ chicken
- Marinate chicken drumsticks or thighs in a mixture of olive oil, garlic, lemon juice, paprika, salt, and pepper.
- Grill the chicken on medium heat until cooked through, turning occasionally and basting with BBQ sauce towards the end.
Mouth-watering pork ribs
- Rub pork ribs with a mixture of brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Slow cook the ribs on the BBQ over indirect heat for a few hours until tender, then brush with BBQ sauce and grill over direct heat for a few minutes on each side until caramelised.
Yummy grilled halloumi skewers
- Cut halloumi cheese into cubes and thread onto skewers alternating with cherry tomatoes, red onion wedges, and chunks of bell peppers.
- Brush the skewers with olive oil and sprinkle with dried oregano.
- Grill on medium-high heat until the halloumi is golden brown and the vegetables are charred.
Flavoursome vegetable kebabs
- Cut a selection of vegetables like zucchini, bell peppers, mushrooms, and red onions into chunks.
- Marinate in a mixture of olive oil, balsamic vinegar, garlic, thyme, salt, and pepper.
- Thread onto skewers and grill until the vegetables are tender and slightly charred.
Perfect pulled pork sandwiches
- Rub a pork shoulder with a mixture of brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper.
- Slow cook on the BBQ over indirect heat for several hours until the meat is tender and easily shreds with a fork.
- Shred the pork and mix with BBQ sauce. Serve on buns with coleslaw.
Juicy corn on the cob
- Peel back the husks of corn without removing them and remove the silk.
- Brush the corn with melted butter and season with salt and pepper.
