The ultimate summer must-try recipes
Anyone else loving the sunshine in the UK this week? With some places reaching as high as 29°, most of us will definitely have experienced at least a little sunshine (if not a lot!)
If you are planning on spending some time outside now it's warmer, you might be starting to think about BBQs and al fresco dining. From grilled kebabs and homemade burgers to refreshing salads and crisps with dip, there are plenty of foods to try this summer.
We've put together some recipe inspiration for you to try...
Watermelon feta salad
What you need:
4 cups of watermelon cut into cubes
1 cup of crumbles feta cheese
1/4 cup of fresh mint leaves, finely chopped
2 tablespoons of olive oil
1 tablespoon of lime juice
Salt and pepper to taste
How to make it:
In a large bowl, combine the watermelon cubes, feta cheese, and mint leaves.Drizzle with olive oil and lime juice.
Toss gently to combine.
Season with salt and pepper to taste.
Store in the fridge and serve chilled for the most refreshing taste!
Lemon chicken skewers
What you need:
Around 450g of chicken breasts, cut into cubes
2 tablespoons of olive oil
2 tablespoons of lemon juice
1 tablespoon of chopped rosemary
1 tablespoon of chopped thyme
2 cloves garlic, minced
Salt and pepper to taste
Wooden skewers which have been soaked in water for 30 minutes
How to make it:
In a bowl, mix olive oil, lemon juice, rosemary, thyme, garlic, salt and pepper.
Add the chicken cubes and leave to marinate for at least 30 minutes.
Preheat your grill to medium-high heat.
Thread the marinated chicken onto skewers.
Place under/on the grill for about 10-12 minutes, turning occasionally
Be sure to check the chicken is fully cooked all the way through before plating up.
Serve with a side of grilled vegetables, rice, couscous or a fresh salad.
Mango Salsa
What you need:
2 ripe mangoes, peeled and diced
1 diced red bell pepper
1/4 red onion, finely chopped
1 jalapeño, seeded and finely chopped
1/4 cup of fresh cilantro, chopped
2 tablespoons of lime juice
Salt to taste
How to make it:
In a medium bowl, combine the mangoes, red bell pepper, red onion, jalapeño and cilantro.
Drizzle with lime juice and sprinkle with salt.
Mix well to combine.
Enjoy with tortilla chips or as a topping for grilled fish or chicken.
Caprese skewers
What you need:
Around 20 cherry tomatoes
Roughly 280g of mozzarella balls (bocconcini)
2 tablespoons of chopped basil leaves
Balsamic glaze & extra-virgin olive oil
Salt and pepper to taste
Wooden skewers
How to make it:
Thread the cherry tomatoes, mozzarella balls and basil leaves onto wooden skewers, alternating as you go.
Arrange the skewers on a serving platter.
Drizzle with the olive oil and balsamic glaze.
Season with salt and pepper to taste.
Serve immediately.
Peach iced tea
What you need:
4 cups of water
4 black tea bags
2 ripe peaches, pitted and sliced
1/4 cup of honey
Ice cubes
Fresh mint for garnish (optional)
How to make it:
In a saucepan, bring the water to a boil.
Remove from heat and add tea bags.
Leave to stew for 5 minutes, then remove tea bags.
Add the peach slices and honey to the hot tea.
Let it cool to room temperature.
Once cooled, transfer to a pitcher and refrigerate until chilled.
Serve over ice and garnish with fresh mint if desired.
